Baked Sea Bass

This simple yet elegant recipe delivers a perfectly flaky and flavorful sea bass. It requires minimal effort and is ideal for a weeknight dinner or a special occasion.

Ingredients

For the Sea Bass
  • 2 (6-ounce) sea bass fillets (about 1.5 inches thick)
  • 1 tablespoon olive oil
  • Salt and freshly ground black pepper to taste
  • 1 lemon, thinly sliced
  • 2 sprigs fresh thyme or rosemary
Optional: For Roasted Asparagus
  • 1 bunch asparagus, ends trimmed
  • 1 teaspoon olive oil
  • Pinch of salt

Instructions

1. Preparation

Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper for easy cleanup.

2. Season the Sea Bass

Pat the sea bass fillets dry with a paper towel. Drizzle the olive oil over the fillets, then season generously with salt and pepper on both sides.

3. Arrange and Bake

Place the seasoned sea bass fillets on the prepared baking sheet. Lay two to three slices of lemon on top of each fillet, and tuck a sprig of fresh herb (thyme or rosemary) under the lemon slices.

If you are including the optional roasted asparagus, toss the trimmed asparagus with 1 teaspoon of olive oil and a pinch of salt, then arrange them on the same baking sheet around the fish.

Bake for 12 to 15 minutes, or until the fish is opaque and flakes easily with a fork. The exact baking time will depend on the thickness of your fillets. A good internal temperature is 145°F (63°C).

4. Serve

Carefully transfer the baked sea bass and asparagus (if included) to serving plates. Drizzle with pan juices and a fresh squeeze of lemon, if desired.
