Lemon Herb Baked Trout

Ingredients
  • 2 whole trout (about 1 to 1.5 lbs each), cleaned and gutted
  • 2 tablespoons olive oil
  • 2 tablespoons fresh lemon juice
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 lemon, thinly sliced

Instructions
  1. Preheat your oven to 400°F. Line a baking sheet with parchment paper for easy cleanup.
  2. In a small bowl, whisk together the olive oil, lemon juice, thyme, rosemary, salt, and pepper.
  3. Place the trout on the prepared baking sheet. Score the skin of each fish a few times on both sides.

Instructions
