Instructions:
Prepare the Swordfish:
Start by patting the swordfish steaks dry with paper towels. This will help the fish sear properly on the grill.
Marinate the Swordfish:
In a small bowl, combine the olive oil, minced garlic, lemon zest, lemon juice, dried oregano, salt, and black pepper. Mix well to create the marinade.
Place the swordfish steaks in a shallow dish or a resealable plastic bag and pour the marinade over them. Make sure the steaks are evenly coated with the marinade.
Cover the dish or seal the bag and refrigerate for 30 minutes to 1 hour. This allows the flavors to infuse into the fish.
