Grilled Swordfish

Ingredients:

  • 2 swordfish steaks (6-8 ounces each)
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1 lemon, zest and juice
  • 1 teaspoon dried oregano
  • Salt and black pepper to taste
  • Lemon wedges and fresh herbs (such as parsley or basil) for garnish

Instructions:

  1. Prepare the Swordfish:
    • Start by patting the swordfish steaks dry with paper towels. This will help the fish sear properly on the grill.
  2. Marinate the Swordfish:
    • In a small bowl, combine the olive oil, minced garlic, lemon zest, lemon juice, dried oregano, salt, and black pepper. Mix well to create the marinade.
    • Place the swordfish steaks in a shallow dish or a resealable plastic bag and pour the marinade over them. Make sure the steaks are evenly coated with the marinade.
    • Cover the dish or seal the bag and refrigerate for 30 minutes to 1 hour. This allows the flavors to infuse into the fish.
  3. Preheat the Grill:
    • Preheat your grill to medium-high heat (around 400-450°F or 200-230°C). Make sure the grill grates are clean and lightly oiled to prevent sticking.
  4. Grill the Swordfish:
    • Remove the swordfish steaks from the marinade and let any excess drip off.
    • Place the swordfish steaks on the preheated grill and cook for about 3-4 minutes on each side, depending on the thickness of the steaks. The fish should be opaque and easily flake with a fork when done.
    • Be careful not to overcook the swordfish, as it can become dry. It's better to slightly undercook it and allow it to rest, as it will continue to cook a bit off the grill due to residual heat.
  5. Serve:
    • Once the swordfish is done, remove it from the grill and let it rest for a few minutes.
    • Garnish the grilled swordfish steaks with lemon wedges and fresh herbs.
    • Serve hot, either on its own or with your choice of side dishes, such as steamed vegetables, a salad, or rice.
