Pan-seared Flounder

Flounder is a delicious, delicate fish that can be prepared in a variety of ways. Here's a simple and tasty recipe for pan-seared flounder with a lemon-butter sauce. This recipe serves 2.

Ingredients:

For the Flounder:

  • 2 flounder fillets (about 6-8 ounces each)
  • Salt and black pepper, to taste
  • 2 tablespoons all-purpose flour
  • 2 tablespoons olive oil
  • 1 tablespoon butter
  • 2 cloves garlic, minced
  • Fresh parsley, for garnish
  • Lemon wedges, for serving

For the Lemon-Butter Sauce:

  • 2 tablespoons butter
  • Juice of 1 lemon
  • 1/4 cup chicken or vegetable broth
  • 1-2 tablespoons capers (optional)
  • 1-2 tablespoons fresh parsley, chopped
  • Salt and black pepper, to taste

Instructions:

  1. Prepare the Flounder:
    • Pat the flounder fillets dry with paper towels.
    • Season both sides of the fillets with salt and black pepper.
  2. Dredge in Flour:
    • Lightly dredge each fillet in the all-purpose flour, shaking off any excess.
  3. Sear the Flounder:
    • In a large skillet, heat the olive oil and 1 tablespoon of butter over medium-high heat.
    • Add the flounder fillets to the skillet, placing them in the hot oil. Cook for about 2-3 minutes on each side until they are golden brown and cooked through. The fish should easily flake with a fork when done.
    • Remove the fillets from the skillet and place them on a warm plate.
  4. Make the Lemon-Butter Sauce:
    • In the same skillet, lower the heat to medium.
    • Add 2 tablespoons of butter, lemon juice, chicken or vegetable broth, capers (if using), and fresh parsley.
    • Season the sauce with salt and black pepper to taste.
    • Simmer the sauce for a few minutes until it thickens slightly and combines well.
  5. Serve:
    • Pour the lemon-butter sauce over the pan-seared flounder fillets.
    • Garnish with fresh parsley and serve with lemon wedges.
  6. Enjoy!
