Ingredients
  • 4 Wahoo fillets (about 6 oz each)

Instructions

  3. Preheat your grill to medium-high heat. Lightly oil the grates.

Instructions
  1. Season the wahoo fillets generously with salt and pepper.

  3. Carefully place the wahoo fillets in the hot skillet. Sear for 3-4 minutes per side until a nice crust forms and the fish is cooked through. Remove the fillets and set them aside on a plate.
  4. Reduce the heat to medium. Add the butter to the skillet. Cook, swirling constantly, until the butter melts and the milk solids turn a light brown color and smell nutty (about 2-3 minutes).
  5. Stir in the minced shallot and cook for 1 minute until softened.
  6. Pour in the white wine to deglaze the pan, scraping up any browned bits. Cook for 1 minute.
  7. Stir in the capers and lemon juice.
  8. Return the wahoo fillets to the pan briefly to coat with the sauce.
  9. Serve immediately, drizzled with the brown butter sauce and garnished with fresh parsley.
